Double-Rich Chocolate Cookies

2 1/2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsweetened cocoa powder
1 cup brown sugar, packed
3/4 cup sugar
1 cup salted softened butter
3 large eggs
2 tsp vanilla
2 cups semisweet chocolate chips
frozen Cool Whip

Preheat oven to 300. In a bowl combine flour, soda, salt and cocoa. Mix with a wire whisk and set aside. In mixer bowl blend sugars. Add butter and beat. Add eggs and vanilla and beat until fluffy. Add the flour mixture and blend on low speed until just mixed. Add chocolate chips and blend until chips are mixed evenly. Do not overmix. Drop dough by rounded teaspoons onto cookie sheet about 1 1/2 inches apart. Bake for 21-23 minutes. Transfer to a cooling surface with a spatula. When cool frost bottom side of one cookie with Cool Whip. Add a cookie to the top and eat immediately. You will love this!

yummm....danny and i make oreos like this (halved):

2 boxes devil's food cake mix
4 eggs
1 stick butter-flavored crisco

mix until JUST combined. cook for 7-8 minutes. cream cheese frosting in between and BAM delish. probably this is a simplified version of yours...we'll have to try it soon!

Aly, your recipe sounds much easier. Do you bake it like a cake and then cut or bake like cookies?

we bake them like cookies...i bet we could try it like a cake too...delish. we loved yours.
