Ingredients:
-Mexican Cheese (Cacique is the brand)
-Pablano Peppers (They look like a cross between anaheim and green bell peppers)
-Corn Tortillas (Don Julio is a good brand)
Directions:
-Put the cheese in the pepper and grill until the pepper is soft and floppy. Cut in half and put inside a corn tortilla with Brad's Salsa (recipe below). Eat and enjoy!
-Note: we bought three peppers and split each and half having six tortillas total. We each had three. It took about 10 minutes tops to make.

Brad's Salsa
-2 large or 4 medium tomatoes, chopped
-1 small onion, chopped
-1 can black beans, drained
-1 can corn, drained
-cilantro to taste, chopped
-1 packet dry Italian or ranch salad dressing mix
-juice of two limes (or lemons)
*Mix all ingredients and serve with tortilla chips, (or Chile Rellenos as the case may be).
*Note: this salsa is more of a pico de gallo than a mushy salsa.
